Directions In a large saucepan, saute the carrots, celery and onion in oil and butter until tender.   3. Add chicken/beef/vegetable stock.give a quick boil,then cover & let it cook at medium flame for 10 minutes.
  4. Add tomato paste & seasoning. Add boil pasta and beans.mix well.add chop green part of spring onion.let it simmer for 5-7 min to get all flavours blended together.taste & adjust seasoning as well
  5. Dish out and topup with parmesan cheese, fresh Dill & Basil.Enjoy with bread sticks & crispy crackers.as pasta & whole vegies makes it little thicker I,try to keep it warm all the time.
  6. Note:There is no hard & fast rule for vegetable selection in Minestrone soup.You can add potato,spinach,bellpepper,Broccoli,squash,red kidney beans or peas as well.same goes for pasta.(any shape) & stock.beef/chicken,vegetable any stock.
