Cook pasta in large pot of boiling water until al dente. Rinse under cold water, and drain. Mix carrots, celery, peppers, tomatoes, and green onion together in large bowl. Bring a large pot of lightly salted water to a boil.

  2. Make ready 1 packages Frozen winter mix veggies (broccoli carrots cauliflower)
  3. Prepare 1 block of monteray jack cheese, cubed
  4. Prepare 1 packages Sliced pepperoni
  5. Make ready 1 can Sliced black olives
  6. Take 1 jar of peppercini peper drained n sliced
  7. Prepare 1 Bottle italian salad dressing

Add drained pasta into a large bowl with tomatoes, cucumber, and onion. Whisk together balsamic vinegar, basil, olive oil, coconut sugar, crushed red pepper and salt. Meanwhile, in a large bowl, combine the dressing ingredients. Add the chicken, pepper, Colby-Monterey Jack cheese, zucchini, squash, tomatoes and onion.

Steps to make Extreme Pasta Salad:
  1. Boil pasta on stove al dente….do not over cook
  2. In glass bowl microwave veggies until not frozen, but not hot about 3 min
  3. Meanwhile cut pepperoni slice in quarters, slice peppercini, and cube cheese
  4. Drain pasta, run under cold water until cool, drain again
  5. Put pasta into large glass bowl, add half bottle of italian dressing immediately
  6. Drain any excess water from veggies n add to pasta
  7. Add all remaining ingredients.except for cheese n remaining dressing
  8. Add cheese n the rest of dressing just be for serving
  9. *** No right our wrong way to do this, I have also added , roasted red peppers , green olives, cubed ham, tomatoes, cheddar cheese , whatever combination of veggies cheese u like best***

Meanwhile, in a large bowl, combine the dressing ingredients. Add the chicken, pepper, Colby-Monterey Jack cheese, zucchini, squash, tomatoes and onion. I know the directions say not to overcook it but trust me on this. I once asked Mom why her macaroni salad was better than mine and she said (and I quote) "You have to cook the snot out of it darlin'". Drain the pasta but don't rinse it.
