- Blanch the Broccoli, carrot and beans. Blanching - Boil water first and then add veggies boil Broccoli for 2-3 minutes and then put in chilled water, and boil the carrot n beans for next 5 minutes or so till they were soft and done but not mushy and put them too in chilled water to stop the cooking process. So all the veggies are blanched now.
- Cube the bell peppers(I have used yellow and red both as I had at home), slice the onion after cutting it into 4. Make the blanched broccoli a little smaller in size, cut the blanched beans into half-inch size and carrot into cubes. Tear the lettuce, Arugula and basil leave roughly by hand.
- In a big bowl, add in everything except the Fetta cheese, mayonnaise, chilli flakes, salt and lemon, give it a quick gentle mix.
- Then add the mayonnaise to it and mix well. Add lemon juice as needed and as per taste, I added the juice of half a small lemon. If you want add the chilli flakes. I sprinkled after platting only. Check salt, if needed add and mix, I added only a small pinch of salt. Put it on the serving plate and top it with Feta Cheese cubed or just break it with hand and sprinkle chilli flakes on it. Serve at room temperature or chill it.
